I think I have finally found a blueberry recipe that I like. While this cookie may be the ugly duckling of my recent cookies, it still has amazing flavor! These cookies have such a soft and pillowy texture that I love. It makes the perfect breakfast cookie or after dinner treat.

AND it is made with fresh blueberries — which means it’s healthy, right?
